Don't let any Aussies try and tell you Pavlova is an Australian dessert because they'll be telling porkies. Our mates across the ditch have a habit of stealing our success stories and calling them their own. Crowded House, Russell Crow and Phar Lap spring to mind. The Pavlova was created and named in honour of the Russian ballet dancer Anna Pavlova when she performed in New Zealand back in the 1920s. The Pavlova (or Pav as we affectionately refer to it) is a cake made of meringue with a crispy crust and a soft, light centre. Traditionally decorated with whipped cream and Kiwi fruit, sliced peaches, passionfruit or strawberries it's a firm favourite with we Kiwis (and Aussies) for special and not so special occasions. To make a "good" pav is a talent to be proud of and generally secretly envied by those who can't. The serving in the photo was from one we enjoyed tonight celebrating my husband's birthday.
